Ingredients

    12 oz chicken cooked
    1 tbsp chili powder
    1 minced garlic clove
    1/3 medium onion (minced)
    1/2 red bell pepper (chopped)
    1- 15 oz can S&W Black Beans (drained)
    1 - 15 oz can S&W Stewed Mexican Recipe Tomatoes (chopped)
    1- 4 oz can diced green chiles
    1.5 cups frozen corn


Directions

Dice chicken and cook with chili powder and minced garlic and onion. When chicken is mostly cooked add black beans and chopped red bell pepper. Cook for a couple of minutes to allow black beans to dry and thicken. Drain the tomato juice into the pan and then chop the tomatoes and add them. Stir and let cook a couple of minutes to let mixture thicken. Mix in green chiles and corn and cook for five more minutes uncovered, stirring occasionally.

Recipe makes 11, .5 cup servings

A half cup of the mixture fills a low carb w/w wrap nicely. I usually make two wraps per adult and add a quarter cup of shredded cheese, a half cup of shredded romaine lettuce, and some sprinkles of Tapatio to each set of burritos. A nicely, filling meal! My kids will eat a burrito each too, minus the Tapatio.

Two burritos complete with La Tortilla low carb w/w wraps, .25 cup shredded cheese, and lettuce comes to about 400 calories.

    This is one of our favorite recipes - I've made it several times, and my family loves it. One caveat, however, is that it makes us a bit gassy. :-) But it is delicious!!! - 6/5/08

    Great dish--I actually made it as a side dish to accompany the chicken (no need for the wraps then). I added cilantro at the end of the cooking and it added a fantastic layer of flavor to it! - 9/12/07

    This was a little bland for me. Next time I'll add more hot sauce or jalepeno, cilantro and lime. Very filling for the calories, though. I will make it again. My kids loved it. - 4/16/07

    Very good! I used a romaine lettuce leaf to make a lettuce wrap and it was very tasty that way too and didn't have to use a tortilla, and still very filling. Note that I did one or two things different - I cooked the chicken first using a simple chicken seasoning on it, and I used cilantro too. - 5/30/11

    Yummy!!! I used cooked chicken (Perdue Short Cuts), and it still turned out DELICIOUS. (The onion provided enough moisture that it didn't stick to the pan.) I used spinach and no cheese. My youngest, who eats nothing but rice and beans, demanded multiple helpings! - 11/22/09
