Introduction

Ingredients

    1 pack Uncle Ben's Wild Rice (prepared)
    3 cups cooked, cubed chicken breast
    1 (10.75 ounce) can condensed cream of celery soup
    1 (Medium) jar diced pimento peppers drained
    1 (Medium) onion , chopped
    2 (14.5 ounce) cans French-style green beans, drained
    1 cup mayonnaise
    1 can sliced water chestnuts, drained

Directions

1. Cook Wild Rice
2. Preheat oven to 350 degrees F
3. In a large bowl, toss together the cooked rice, chicken, cream of celery soup, pimentos, onion, green beans, mayonnaise, water chestnuts, salt, and pepper to taste.

Transfer to a 3 quart casserole dish.
4. Bake in the preheated oven for 25 to 30 minutes, or until heated through.

    To reduce fat and sodium, I used low fat Mayo, reduced sodium CoCelery, and prepared Wild Rice from raw rice versus using the commercial brand with all the chemicals. Turned out to be AMAZING! - 4/12/09

    Good
    We all thought this was good ... but needed something or other. My husband suggested either green chilis or Chinese noodles. The water chestnuts are a great idea for crunchiness. - 4/29/09
