Number of Servings: 8

Ingredients

    6 cups Sliced Okra
    3 tablespoons Extra Light Olive Oil
    1/2 cup Diced Onion
    2 tablespoons Vinegar
    1 1/2 teaspoon Thyme
    1/2 tablespoon Basil
    1 1/2 teaspoon salt
    1 tablespoon black pepper
    2 Bay leaves
    5 slices Crumbled Bacon or 1 cup Diced Ham
    6 oz shrimp
    1 small can Tomato Paste
    2 cups water

Directions

- -slice okra; saute in large, deep skillet in oil until brown, stirring frequently; add onion, 2 tablespoons vinegar, crumbled bacon or ham cubes and tomato paste and water. Season with salt, pepper, garlic powder, thyme, basil, and crumbled bay leaves. Cover and simmer on medium low heat for 30-45 minutes. Makes 8, 1/2 cup servings.

    Incredible!
    Obviously not vegetarian, but was fantastic. I added about 3 T of Louisiana hot sauce. This would also be great with chicken or even no meat at all and adding eggplant. Very versatile and yummy! - 7/21/10
