Introduction

Ingredients

    1 1/2 cup ripe tomatoes, blended
    1/2 cup fresh lemon juice
    1 TBS extra virgin olive oil
    3 cloves garlic
    1/4 cup red bell pepper
    3 leaves of fresh basil
    4 medium zucchini's

Directions

In a blender, combine the fresh tomatoes with the basil, olive oil, lemon juice, garlic, and red bell pepper and puree until smooth or blend till chunky depending on your sauce preference.

Cut the zucchinis lengthwise into ⅛-inch slices, then cut the slices lengthwise into ⅛-inch strips resembling spaghetti. Transfer the zucchini noodles to a bowl. Add the marinara sauce, toss to coat and serve immediately.

    Love the idea of cutting the zucchini this way - I made my ribbons with a peeler. Used roasted garlic in mine so it wasn't 100% raw. - 4/18/09

    I find if I take the zucchini and place it in a collander in the sink, sprinkle sea salt on in and let it sit and drain for awhile, it mocks pasta closer. For my family at first I had to peel it, now I leave the skin on. It helps them break into raw much easier too. - 9/22/12
