Number of Servings: 8

Ingredients

    1 tbsp olive oil
    1 clove garlic, crushed
    1 onion, chopped
    1 green bell pepper, chopped
    4 celery stalks, diced
    1 can black beans, drained
    1 can pinto beans, drained
    2 cans kidney beans, drained
    1 large (28 oz) can diced tomatoes, with liquid
    1 can tomato sauce
    1 can corn, drained
    0.5 - 1 tbsp beef or chicken boullion powder, or to taste
    1 tbsp ground cumin, or to taste
    1 tbsp red chili powder, or to taste
    1 tsp crushed oregano, or to taste

Directions

1. Saute the onion in olive oil until tender
2. Add bell pepper and celery
3. Saute about 5 minutes (while you open the cans)
4. Add all other ingredients, adding spices a little at a time and tasting after mixing.
5. Heat through.

Makes about 8 2-cup servings.

Can also be made with diced tofu or extra lean ground turkey added to the onion when sauteeing.

    I use vegetable bullion to make it truly vegetarian, a chopped chipotle pepper for heat and add a cup of barley at the end for more texture and fiber! So filling and good! - 1/27/14
