Introduction

Spinach and cheese stuffed mushrooms Spinach and cheese stuffed mushrooms
Number of Servings: 6

Ingredients

    6 large stuffing mushrooms
    1 10 oz package frozen chopped spinach
    1/2 a large onion, diced
    1 glove garlic, diced
    2 tsp parmesan cheese
    1/2 cup cheddar cheese
    1 tsp olive oil
    1/4 paprika
    1/4 coriander
    dash pepper
    dash salt

Directions

Preheat oven to 350.
Clean and hollow out six large mushroom caps (average 14 oz package.) Put in 8 x 8 pan

Heat 1 tsp olive oil to large skillet, medium heat
Add onions and garlic, saute until onions are soft
Add spinach. Mix well
Add parmesan cheese. Mix well.
Add cheddar cheese. Reduce to low heat and mix.
Add paprika, coriander, and salt and pepper to taste.
Remove heat, spoon mixture into mushroom caps.
Bake mushroom caps ~20 minutes or until desired mushroom texture.
Makes 6 large mushrooms

    These were great! I made a couple to go with a veggie galette for lunch today. I used fresh spinach and fresh parm and it worked just fine. I'm glad I only had 2 good sized mushrooms - I would have had trouble not eating more than I should. Next time, I'll chop the stems & include them. - 6/28/09

    Against my better judgment I went ahead and made this exactly as the recipe stated. I had a feeling by looking at the ingredients that it was going to be pretty bland but I fell for all the 4 and 5 star ratings. Not a huge mistake, but a mistake. It needs some spice. - 8/7/13

    These were fantastic! I used lowfat jalapeno jack cheese instead, and used basil instead of paprika and coriander, and used fresh spinich chopped up. On a few of them I added bits of crisp bacon (for my fiance). They were a HUGE hit!:) - 1/19/11

    I made two changes in the recipe because I didn't have one ingredient so I used baby kale mix instead of the spinach. The other one was that I cut up the stems of the mushrooms and sautéed them too. It was delicious! I will certainly make it again. - 8/11/18
