Ingredients

    Ground beef, lean, 16 oz
    Stewed Tomatoes, 1 cup
    *Ketchup, Heinz, 4 tbsp
    Heavy Whipping Cream, 2 tbsp
    Bread crumbs, dry, grated, seasoned, 1 cup
    Egg, fresh, 1 jumbo
    Lea & Perrins, Worcestershire Sauce, 3 tsp
    Salt, 1 tsp
    Pepper, black, 1 tbsp
    Cider Vinegar, 1 tbsp
    Brown Sugar, 6 tsp packed

Directions

Combine all ingredients in a mixing bowl, except 1 T of the ketchup, cider and brown sugar. Using your hand works best! Fill 12 muffin tins. Mix remaining ketchup, vinegar and brown sugar in a small bowl. Spoon over muffins. Bake 350 for 30 minutes.

    I enjoyed this recipe. We used the diced tomatoes with garlic and basil flavoring. I used half cup in meat and mashed the rest of the can up for the sauce. Add brown sugar to tomatoes and no vinegar(didn't have any). Problem is, when food is too good, I eat more. So I had 2 instead of one. Yum. - 4/23/09

    This was the moistest and tastiest meatloaf I have ever had! I mistakenly left out the 2 T. heavy cream... let me tell you - you will not miss it! I also cut out the salt and it was perfect. So good I had to eat 2, oops. My boyfriend is a tough critic, but he also loved these! Thanks for the recipe! - 5/27/09

    Sounds great! I'm going to try this one tonight but will subsitute out the cream with whole milk, ketchup with one carb and use the rotel. For more fiber try using oatmeal instead of crumbs. - 5/10/09

    I found a good filler instead of crumbs or oats.I didn't have any of either and didn't want to go to the store.
    I tried 1 1/4 cp. ofRice Krispies per lb. of meat product and it was delicious.It's the only thing I use now.I also add roasted garlic,just personal taste...Chef Jim

    I subbed diced onion for the tomatoes to please my son and it was delicious. I would lower the amount of brown sugar in the sauce, as it was sweeter than we like. GREAT portion control and everyone liked it. Thank you! - 5/13/09

    This is an easy recipe to make and the muffin size is portable and portion wonderful. i added oregano and used italian breadcrumbs with romano cheese in them. Really tasty. They are also great cold in a sandwich. Thanks for a wonderful recipe. - 5/9/09

    Followed the recipe, only made it with Ground Turkey- SOOOOOOOOO little time to prep and bake, and insanely easy storage in the freezer- takes 30 secs to 1:00 of microwaving from freezer to dinner table- - 5/27/09

    Really good!I replaced the beef with ground turkey, and the bread crumbs with oat bran. Next time I'll either add a bit more oat bran or part bread crumbs, part oat bran. Mine were about 117 calories each. And yum!! - 5/18/09

    Unbelievably good!!! I omitted the heavy whipping cream and increased the bread crumbs to 1 1/2 cup. The tase was great and the texture was perfect. This has become the only recipe my family usese for meatloaf now. The only downside is there is never any leftovers to go in the freezer. - 7/11/09

    This recipe is wonderful!! I tried it with the lipton onion soup mix and also I used diced tomatoes with basil and oregano. And then for the top I didn't have vinegar so I just did ketchup and brown sugar. I thought the pepper could be toned down a bit if you don't like spicy foods. - 5/13/09

    I also used ground turkey breast and skipped the heavy whipping cream. We thought the sauce was too sweet for our taste, and next time I will use less stewed tomatoes (mine had oregano and basil added), and make sure that I dice them up. The tomato chunks didn't go over too well with my family. - 4/24/12

    This was wonderful! The portions were a bit small for my big eaters, but they just had a few of them. The flavor, with the recipe just as is, was wonderful. The brown sugar on top gave it a nice added flavor. I will make this again! - 11/9/09

    I make a very similar recipe only it calls for 1/2 cup of sauteed/diced onions and 1/2 cup of sauteed/diced carrots. Good way to add extra veggies! You can also just top with ketchup if you don't care for vinegar mix.

    Wow! These are amazing! I used the Rotel tomatoes w/ green chilis instead of the stewed tomatoes, and used skim milk in place of the heavy cream. (Didn't have any heavy cream, but the skim milk worked!) My husband, who is beyond picky thought these were delish! I ate 2 but cut back on my sides. - 6/9/09

    This recipe is awesome. I went with the diced tomatoes (since that's all I had) and it was delicious. I left out the vinegar and cream since I didn't have that either, and it still tasted great.
