I didn't like the fat that accumulated under each little muffin bite. I prefer to cook on a rack.
The flavor is incredible!! I messed up by putting all the ketchup, cider, & brown sugar in the meat, but it didn't last long enough for anyone to complain. Just had to cook it longer and didn't have "muffins" so much as "blobs." Still dee-freakin-licious!
I usually don't care for meatloaf but my men do. I did add onions and a bit of rosemary to mine and omitted the salt.
To make this lower carb and more keto friendly, could we eliminate the sugar and use crushed pork rinds instead of bread crumbs? Has anyone tried it that way? TIA
Will have to tweak for fewer carbs. Would love to see more true LCHF recipes.
Made this for me and the boyfriend tonight and I'd have to say it was very good! I omitted the onions and tomatoes because I don't like them. However the only thing I would change is the brown sugar. Maybe 1 or 2 tsps of the brown sugar and add barbaque instead. Was still very good!
Sodium too high. Otherwise excellent
Quite yummy! I omitted the heavy cream, added the Lipton soup, and halved the Brown sugar. My family loved these. I loved the portion control and will definitely make this again.
This is way to salty. I followed the recipe and it was salty and soggy. Not good at all and I am shocked at so many good reviews.
This is not low carb
This recipe was amazing. I messed up and put the brown sugar into the actual meatloaf. I picked some of it out, and put the rest on top, but it was super awesome. I dislike meatloaf, and I loved this recipe. Highly recommended.
Made this yesterday & it was a hit! Used ground turkey, omitted the cream, soy instead of worstershire sauce since I didn't have any, old fashion oats instead of the bread crumbs and only 5 tsp instead of 6 of the brown sugar. Because of the oats cook about 5 minutes longer. It was yummy!!
Tweaked it for diet and it's great! Based on other reviews I used turkey instead of beef, I omitted the salt and the whipping cream. I also used oats instead of bread crumbs and salsa instead of diced tomatoes- gave it good flavor! About 111 calories each muffin! Will make more sauce next time!
Love, Love , Love this recipe. And love the muffin idea. Can have one for a quick protein when you have just one! Great flavor. I used the Lipton Onion Soup and Stewed tomatoes with oregano and basil and plain greek yogurt instead of the heavy cream. Delicious!
