This is an excellent recipe. It's a good way to sneak in those extra vegetables. It's so good that people at work, TOPS group, and book have all asked for the recipe.

Very good soup

Spray dutch oven with cooking spray and saute onion.
Add broth and 1 cup of water.
Add potatoes and bring to a boil
Boil potatoes until fork soft
Ladel 1/2 of potato and broth into blender and blend until smooth.
Return blended mixture to dutch oven
Mix flour to 1/2 cup of water and stir into soup stir until thick.
Salt and Pepper to taste.
Add cheese before serving and mix well.

I found this recipe in a book and I tried to make it healthier by using raw potatoes diced instead of Hash browns and fat free cream cheese

71% less fat than original recipe, increase fiber by 50% by going green with broccoli. (Looks cream based - but it's not!)
