Number of Servings: 12

Ingredients

    1.5 cups dry lentils
    1 cup long grain wild rice
    5 cups chicken broth
    1/4 cup olive oil
    3 cloves garlic, pressed
    1 small onion, chopped
    1/2 to 1 whole can Del Monte Diced Tomato w/ Onion & Garlic (optional)
    1 tsp Old Bay seasoning
    seas salt & fresh cracked pepper to taste

Directions

Makes 12 1-cup servings
Throw all ingredients except seasonings into crock pot. Turn on high for 1.5 hours or low for 3 hours. Add seasonings at the end, to preserve flavor.

    This is a delicious recipe - however when I made it I only got 9 cups - which made the cals higher - and when I recalculated it on my own using the cals in 'dry' lentils and 'dry' wild rice the cals came out to more than double the cals per cup - and that is without the oil - still tasty though :) - 3/28/13
