Ingredients

    1 - 8 oz Cream Cheese
    1 - 8 oz Whipping cream
    3/4 cup blueberries
    1/2 cup splenda

So, in 2009 I have some variations if you want a crust I suggest the low carb pecan crust. Also, I use Xylitol instead of splenda. But I still love this recipe.

Directions

In a bowl whip whipping cream until peaks form. Add Splenda. Blend in cream cheese whip until smooth. With a spoon gently add frozen blueberries. Spoon into dessert cups. Enjoy.

Can the whipped cream and the cream cheese be fat free or reduced? - 3/15/07

substitutions are always a good idea and they work just the same. Just need a faster blender to whip the reduced fat cream

This low-carb cheesecake dessert is amazing! I made it with half the amount of Splenda so it has more of the cream cheese flavor yet still has enough sweetness! Love this recipe! - 10/14/10

I liked this recipe best after it set in the refrigerator for a couple of hours. Next time I will try Stevia, since the Splenda still gives me a slight after taste. - 8/16/09

Too funny! I was making this myself, after branching out from frozen blueberries and cream. For me, the whipping cream, cream cheese and blueberries are good enough on their own, so I use the equivalent of 1/4 cup of splenda when I make this. - 3/17/11
