Introduction

Ingredients

    2 c cooked brown rice
    1/2 c red onion, diced fine
    4 garlic cloves, grated
    1/2 t cumin seed
    1/4 t red pepper flakes
    15 oz black beans, drained and rinsed
    14 oz diced tomatoes, fire roasted or low sodium
    1 T cilantro, chopped

Directions

Cook rice according to package directions (omitting salt and oil). Place a saute pan over moderate heat. Spray with nonstick cooking spray. Cook red onion and garlic for about three or four minutes. Add spices and cook until they become fragrant. Add beans and tomatoes. Cook an additional 20 minutes, stirring occasionally. Once rice is cooked, add to vegetables. Stir, serve and garnish with chopped fresh cilantro.

    I have this made ready for supper time.
    I cook brown rice and when it is cold put it in the freezer. That way it is ready to use other times to make this a quick meal and to reduce costs of the frozen rice packages. Just make your own Pat in Maine.

    This was really good! Did use salsa for part of the tomatoes so didn't add more onion but this is a great start to a burrito in a bowl! We also added a can of corn--colorful AND good tasting! - 10/1/10

    This was delish! As for the serving sizes ewils1, divide the finished meal into four equal servings. This recipe makes 4 servings and the calorie content per 1 serving is listed. Then you will also be able to see what size the servings are once divided. - 11/29/10

    I have made black beans and rice for years but have never added cumin and cilantro. I will try it. I also like the suggestion of trying it with quinoa. That would add more protein. - 11/15/10

    Love it! Thank you, Chef Meg! While I enjoy spicy dishes, this was wonderfully tasty and mildly spicy – something will share with an American and international student dinner gathering later this week.     Diannemt--Success brand has a boil in the bag kind that cooks in just 10 minutes on the stove or microwave. I usually cook it in the microwave with chicken broth. I'm sure it make a great addition to this recipe. - 11/11/10

    cooked black beans from scratch; substituted barley for brown rice, and added fresh corn, sauteed onion, garlic and celery, Mrs. Dash's original no-sodium spice. Delicious for make- ahead servings. I serve with fresh corn on the cob, home made corn muffins. - 5/18/12

    I make something very similar to this. I use rotel instead of the regular tomatoes. Very good. Excellent with fish like tilapia or bass. - 1/13/12

    I would suggest not adding the garlic at the same time as the onion, it will scorch and be bitter. Instead, add just 30 seconds or so before adding the beans and rice - 5/19/11

    Trader Joe's has brown rice in the freezer section. Each box has 3 packages of the rice inside. I heat it in a frying pan with a couple of tbsp. of water. It's ready in about 5 minutes. One of my favorite shortcuts for making a dish with brown rice. - 9/25/13

    I love rice & black beans. I used to live in Brazil where almost everyone ate rice & black beans (plus chicken, pork, beef or fish) for lunch. I cooked for myself, so ate them only when I visited Brazilian friends. I use black beans in soups and even in chili or eat them as a side dish. - 11/4/10

    I used spicy red pepper diced tomatoes, added a 1/4 oz of 2% shredded cheddar and this was TRES YUMMY! Next time will add some shredded chicken or maybe ground turkey. - 12/29/11

    I was very happy with this recipe. Too often beans and rice are boring/bland. I added a little hot pepper sauce and some peppers. This was very good, and even my husband liked it. He doesn't usually like brown rice, but he liked it this time. - 9/26/13

    I like the recipe, I would exchnge cannd blk beans for fresh blk beans cookd in crock w/o the salt+sodium. The rice I would mix brown rice+country wild rice [long grain brown rice, whole grain wehani rice, whole grain blk rice] this mixture gives recipe a nutty flavor. - 7/14/13

    This is my go to recipe for beans & rice. Long grain rice cooked in chicken broth or Uncle Ben's whole grain brown rice, are both good, depending on how much time I have. Swapped Rotel for the diced tomatoes, sometimes add chicken or shrimp. Always top with sharp cheddar. My family loves it. - 11/8/18

    I'm going to try and convert this to a crockpot recipe, with dried beans. My thought is if I cook the beans in the crockpot at night, then add the rice, salsa, corn and extra veggies in the crock pot, it should be done by the end of the work day. - 9/30/13
