Ingredients

    1 1&1/2 lb eggplant
    Olive Oil Cooking Spray
    Salt to taste
    Black Pepper to taste

Directions

Preheat oven to 375 F.
Peel the eggplant and slice it crosswise into 12 slices.
Spray the baking pan with the olive oil spray.
Arrange the slices in a single layer and season to taste with sea salt and black pepper.
Bake for 20 minutes. Serve immediately or let cool.

    Incredible!
    This is a great, versatile "jumping-off-point" recipe. I mixed a tad of salt & pepper and Italian seasoning with olive oil & used a basting brush to "paint" both sides of the eggplant. Yummy and SO easy! - 8/10/12

    Great! I had eggplant from the farmer's market that needed cooking. Had this with whole grain pasta and buitoni roasted garlic marinara--a wonderful and healthy meal. - 10/4/10

    Very good. Made it tonight, and had it with spaghetti marinara. Definitely felt better about that than fried eggplant parmesean. (sp?) I will remember this the next time we get eggplant without some other purpose for it! - 10/19/09
