Number of Servings: 8

Ingredients

    2 Cups of steamed Cauliflower
    3 Hard boiled eggs
    1/3 C. Mayonnaise
    1/3 C. Miracle Whip
    1 teas. Yellow Mustard
    1/4 Cup Chopped red onions


Directions

Makes approx. 8 - 1/2 cup servings.

Chop steamed cauliflower the size you would chop the potato pieces. Dice hard boiled eggs very finely and add to the cauliflower. Add chopped red onions then mix in the mayonnaise, miracle whip, mustard and then add salt and pepper to taste and finally sprinkle with paprika for color.

Store in refrigerator.

    Really good! I did not use the Miracle Whip but, added a spoonful of sweet pickle relish to add tang. I also added a stalk of celery chopped and a couple spoonfuls of imitation bacon bits. - 8/22/11

    This was very good. A nice lower carb alternative to potato salad and a great way to eat more veggies. Some liked the crunch more than potato salad. I used 4 cups of cauliflower, though, instead of 2. - 9/21/09

    I absolutely love this. I've made it twice since Saturday - the second time a huge batch so I can take it to work over the next few days. I did tweak it though, adding curry powder. A different and flavorful way to go. Thank you! - 8/18/09

    I absolutely loved it! Added some chopped dill pickles. Was a little sweet for hubby (most potato salad is), so I'll add less Miracle Whip and more Mayo next time as a compromise, but I really did love it just the way it is! - 5/30/10

    Very good as is. Made it again and went with all Mayo and added some bacon, 2 TBS of buttermilk, chopped fresh dill, thyme and marjoram. Very good that way too. This is a very versatile recipe. - 5/26/13

    I made this today to go with our dinner of steak and artichokes. I LOVED it! I used mayo and "Miracle Mayo", a product from Walden Farms that has zero carbs, zero fats, but GREAT flavor! Potatoes are tastless anyway, so the dressing mix is what you really taste!!! Brilliant!!! - 8/16/12

    I like it very mustardy and only added about 3 T of mayo, no miracle whip. I am thinking of adding horseradish to the individual servings as my husband is a SuperTaster and doesn't like anything too strong.     Sounds very yummy. Am going to try to replace a portion of mayo and miracle whip with some lowfat greek yogurt. Thanks. It such a good base recipe, one can even add their own touch.Peppers, celery, bacon bits, etc. - 7/14/09
