Number of Servings: 12

Ingredients

    1 cup Whole Wheat flour
    1 cup wheat bran
    1/2 cup splenda
    3 teaspoons baking powder
    1/4 teaspoon salt
    1 egg
    1 cup 1% milk
    1/4 cup applesauce
    1 cup fresh or frozen unsweetened raspberries*

Directions

In a bowl, combine the flour, bran, sugar, baking powder and salt. In another bowl, mix the egg , milk and applesauce; stir into dry ingredients just until moistened. Gently fold in raspberries.

Coat muffin cups with nonstick cooking spray or use paper liners; fill two-thirds full with batter. Bake at 400 degrees F for 20 minutes or until golden brown. Cool for 5 minutes before removing from pan to a wire rack.

    These were okay, but not great. I used normal sugar instead of Splenda. A bit too wholewheat for me. May be nice with a few choc chips added. - 9/8/13

    I'm not a big fan of artificial sweeteners, so Instead of splenda I used brown sugar and a bit of honey, FAB! - 7/24/12

    Fantastic recipe - easy to make, even I couldn't mess it up! I added 2 tsp cinnamon (because I love it) and 1/2 tsp vanilla essence and Sugarless liquid instead of Splenda (because it has zero carbs). Also made chocolate blueberry version, with half cup cocoa powder and 1 cup blueberries - awesome! - 3/11/12

    I made these the other day - They were delicious! Even my mom who doesn't like to eat whole wheat cause she's picky, didn't even notice! Definatley a recipe to save ;). Plus, there low calorie! Thank you;) - 11/27/11
