Ingredients

Mango Salsa
1 large mango
1 medium tomato
1/2 cup red onion
1 cup canned black beans rinsed
2 tbsp fresh cilantro (or 2 tsp dried)
juice of one small lime
salt and pepper to taste
Tilapia
2 3-4 ounce tilapia fillets
1 tsp cumin
1 tbsp chile powder
2 tsp oregano
salt and pepper to taste
Directions
For Mango Salsa-
Chop mango, tomato, and onions and put in medium sized bowl. Add rinsed black beans, lime juice, cilantro, and salt and pepper.
For Tilapia-
Mix cumin, chile powder, oregano, and salt and pepper in small dish. Rub spices on fish.
In a nonstick pan (sprayed with Pam) cook the tilapia for approximately 3-4 minutes on each side, or until the fish flakes easily with a fork.
Serve hot fish with cold mango salsa on top, or on the side with a side of brown rice. Enjoy!

I love this recipe! I used a chile lime rub that I bought through pampered chef versus making the rub from this recipe, but other than that I made it as described and the flavors just go so well together...so delicious!! My husband, who isn't a big fish eater, REALLY liked it as well! Thank you! - 6/7/11
