Ingredients

    Mango Salsa
    1 large mango
    1 medium tomato
    1/2 cup red onion
1 cup canned black beans rinsed
2 tbsp fresh cilantro (or 2 tsp dried)
    juice of one small lime
    salt and pepper to taste

    Tilapia

    2 3-4 ounce tilapia fillets
    1 tsp cumin
    1 tbsp chile powder
    2 tsp oregano
    salt and pepper to taste

Directions

For Mango Salsa-

Chop mango, tomato, and onions and put in medium sized bowl. Add rinsed black beans, lime juice, cilantro, and salt and pepper.

For Tilapia-

Mix cumin, chile powder, oregano, and salt and pepper in small dish. Rub spices on fish.
In a nonstick pan (sprayed with Pam) cook the tilapia for approximately 3-4 minutes on each side, or until the fish flakes easily with a fork.

Serve hot fish with cold mango salsa on top, or on the side with a side of brown rice. Enjoy!

I really enjoyed this recipe with the exception of the spices being a little overpowering. I would cut back on the chili powder a bit next time. I ate it on a bed of brown rice and topped it with the salsa and it was delicious all mixed together! - 11/14/11

I would double the whole recipe for 5, the fish tastes best with a nice coat of spices on it- and its always good to have more salsa if people want extras. Enjoy!

I love this recipe! I used a chile lime rub that I bought through pampered chef versus making the rub from this recipe, but other than that I made it as described and the flavors just go so well together...so delicious!! My husband, who isn't a big fish eater, REALLY liked it as well! Thank you! - 6/7/11

Even my husband, who is really picky about fish, loved this one. The only whitefish he typically will eat is halibut. It will be in my regular meal rotation. Great recipe! - 4/3/11

Thanks. This was a delicious recipe even with my modifications. I made this with pinto beans because I didn't have black beans at the time. My family doesn't like tomatoes so I left those out of the salsa. - 5/11/10
