This tangy chicken dish is simple and delicious. This tangy chicken dish is simple and delicious.
Number of Servings: 8

Ingredients

    4 skinless, boneless chicken breast cut in 1/2
    3 garlic cloves
    1 cup salsa
    Juice of 1 1/2 limes
    1/4 cup reduced-fat ranch dressing
    1 cup shredded reduced-fat Cheddar cheese

Tips

Serve over rice and beans with a side salad.


Directions

Coat a skillet with cooking spray. Place over medium heat.
Saute the chicken for three minutes per side.
Add the garlic.
In a bowl, mix the salsa, lime juice, and ranch dressing. Spread on top of the chicken. Cook another five minutes.
Sprinkle on the cheese, cover and cook until the chicken in no longer pink, about 4-5 minutes.

Makes 8 servings (1/2 breast each)

    Easy to make and my whole family loved the dish. It is also good the next day. I would recommend not adding the cheese until you are ready to serve so that the cheese doesn't melt too much. I have already made this dish twice, that's how much we liked it. Thanks! - 7/2/09

    I made this last night and everyone loved it. I got some comments about how it didn't look that pleasing to the eye, but that it still tasted great. I would maybe add some diced red tomatoes and cilantro on top to give it some color. Thanks for the great recipe! - 7/15/08

    Fantastic! Really does taste a lot like the Applebee's dish. Made my own salsa from a recipe on this site, will definitely be combining ranch and salsa for my normal salad dressing now. Will be in high rotation in my house! Will likely add black beans to add fiber, and serve over brown rice! - 1/13/09

    Served this with Santa Fe Beans and Rice and some steamed southwest veggies. My husband said he thought it was too indulgent for a weeknight meal (we're strict through the week, have a cheat meal on the weekend.)     YUMMO!! I used lite parmasan peppercorn ranch dressing-that's the only ranch I had. It had 2 grams of fat for every 2 tbs. So it added a few more fat grams. I pounded the chicken thin and cooked them on my Foreman Grill, then followed the rest of the recipe. The whole family went crazy! Thanks !!! - 10/12/07

    Wow! This recipe was loved by everyone. I made it with brown basmai rice and it had so much flavor my family didn't even realize I fed them "healthy" rice! I did use regular ranch dressing because I hate fat free. The only other change I'd make is I'd make a double recipe nexttime for leftovers! - 6/9/09

    Very good. Low effort for high flavor. I made my own ranch dressing (very easy) and put the cheese on a minute or two before finishing cooking. Makes a lot of sauce! Make rice to go with it. - 4/7/08

    I made this for my husband and I. The only thing I would do differently next time is to put the cheese in closer to the time the chicken is done. Most of the cheese melted off and I didn't really taste it. But other wise, both my husband and I really enjoyed it. - 8/30/07

    I liked this and found it to be tasty & healthy. My boyfriend agreed but said the sauce looked "sketchy" at first b/c it kind of resembles russian dressing. One problem though, when I simmered w/ lid on, the sauce got watery :( ill be making this one a lot (no more lid though!) - 5/18/07

    This was great! The sauce was fantastic, tangy and a little spicy (well, I used spicy salsa). FANTASTIC served with brown rice - spiced the rice with a packet of Just Lime, & it was wonderful with the sauce ladled on top. -swoon- Thank you!! - 4/28/07

    This was great!! The ranch dressing & cheese combined w/the salsa...oh my!!! It was low carb heaven. :) The calories & fat are nice and low too.     Love this recipe, though I make a couple of changes. First, I pat the dry chicken breast with some reduced sodium taco seasoning. Then I grill it on a George Foreman grill till done, before putting it on a baking sheet. I spoon the salsa/ranch mix on top, then the cheese, and broil it toll melted. - 12/17/13

    I have a husband who must have meat preferably at all meals but usually settles for meat at dinnertime.He finally has slowed down his eating habits and now cooking for him is more pleasureable for me.He won't wear his teeth so some meats are hard for him to eat.He suffers from diabetes also. - 7/3/12

    I LOVE this dish. It's very easy to make and simply to adjust to taste and servings (I usually only cooking for myself).

    I do season the chicken with a dash pepper and a bit of chili powder as well for an extra kick. I just love how easy and quick this is.
