Introduction

Ingredients

    2 medium green onions, sliced thin
    1/4 cup chicken or vegetable broth, low sodium
    2 tbsp natural peanut butter, creamy
    1 tbsp plus 1 tsp cider vinegar
    1 tsp sesame oil
    1/4 tsp cayenne, or more if you like it hot
    4 cups cooked whole wheat spaghetti

Directions

Combine all ingredients except spaghetti.
Stir the hot spaghetti into the sauce.
Serve right away for a hot meal, or refrigerate for a cold meal.

    I made a meal out of this by adding chicken, peas, water chestnuts, peanuts, soy sauce, 1/4 tsp each of red pepper, cayanne pepper and asian five spice. Tastey and delicious!! - 6/2/09

    My picky kids actually ate this! I took out the cayenne as I thought it would be too spicy (and I didn't have any on hand) and added a bit of garlic and it still needed some kick. I also reserved some of the pasta water to add as needed to smooth it back out from the peanut butter clumping up. - 8/5/08

    Fantastic! I didn't have any sesame oil on hand so I went without it. I had some rice wine vinegar that I added instead of cider vinegar. Plus I put in a splash of tamari. I added fresh broccoli to the pasta for the last 2 minutes or so. it was fantastic! Thumbs up from the 3-yr old, too! - 4/7/09

    Read the reviews, so I added soy sauce, garlic, asparagus, and mushrooms (just what I happened to have). I did NOT put in any Cayenne, as I don't do spicy. This was good for my tastes. Not great, but good. I'll make it again with more *oomph* added to it. - 1/2/08

    We enjoyed this dish! I added red peppers, water chestnuts and broccoli to get in some extra veggies. A sprinkle of soy sauce was also needed. My husband suggested adding chicken next time. It will definetly be in our monthly menu cycle. Enjoy! - 3/27/07

    I made a variation of this that had 3T PB, 1/2 t fresh ginger, 2T honey, 1 garlic clove, 1/4 Cup rice wine vinegar and 3T soy sauce, also added chicken. It was excellent and not dry at all. Probably a little more fattening with honey. - 1/18/10

    I used shirataki instead of the pasta (only about 15 calories to an entire package) and veggie broth, and added a lot of ginger for more heat. These are perhaps an acquired taste for some, but you can't beat the calorie count! - 1/1/08

    My husband and I didn't really care for this pasta that much. Too much peanut butter flavor, not enough sesame flavor and it got dried out quickly and tasted blan.

    My husband loves peanut sauces but he didn't care for this one too much.

    Made this with ww bowties, used extra tlbsp. PB and almost the whole can of chicken broth. I thought this made it thiker and creamier. I forgot the cayenne!
    Next time will be sure to use it as it needed zip.
    Over all very good and very quick!!! Thanks for sharing!

    This will definitely be added to my recipe collection! I did make a few substitutions ~ I used whole wheat penne pasta, rice vinegar and spicy chili sauce instead of the cayeynne. I also added broccoli...it would be good with chicken too, I think. Thanks for sharing! - 5/13/09

    Very tasty and I love that you can easily bump up the spicy factor with the cayenne pepper. I think I might add more chicken broth next time because the peanut butter really sucked the moisture out of the sauce. - 2/6/10

    I loved this. I did follow a few suggestions. Added some pasta water, sauted some red pepper and mushrooms to add to it, along with a little soy sauce. next time I will add more vegetables, and to make hubby happy, some chicken. Very satisfying and quick. - 2/3/10

    It had ok flavor of peanut butter, couldn't even tell there was sesame in it. The other problem I had was that it didn't stay creamy. The pasta absorbed all the extra moisture, and I ate it within 5 mins of preparing it. I added a bit of my soy milk to my bowl and stirred it in and it helped. - 5/7/07

    I made something almost exactly like this for lunch on Saturday.. I added some chopped cucumbers and cilantro, and some finely chopped jalepeno (I love spicy!). Chilled all the ingredients separately, then mixed them together when we were ready to eat. It stayed plenty moist. - 7/2/09

    I love this; very clever using chicken-broth for the sauce's base. This recipe is so easy to make, and it's so tasty. I put my serving on a bed (2 cups) of shredded cabbage to help fill me up... or else I'd eat it all. The sauce would also be a wonderful dressing just for a 'Thai'-style coleslaw. - 7/23/09

    Mmm! Sounds yummy! Will make this and add grilled chicken and a half cup almond milk (to avoid drying out), will chill and then add cilantro, shredded cucumber and a tsp of thai chili paste!! Healthful thai meal fit for a Sparker!! :) - 7/22/09

    I often make something like this using salsa for the water (instead of the cayenne) and lemon juice for the vinegar. I also add a block of tofu and a bunch of broccoli. In fact, I usually use broccoli instead of the noodles and serve it over brown rice. I look forward to trying your version today! - 1/1/08

    This is a really yummy dish, though it needs some chicken, or tofu. Also could have used some vegetables. It was a bit dry, so I also would probably double the sauce ingredients (except the cayene- the spice is perfect). One thing I liked was how simple and quick it was! - 1/14/13

    This was not good. I had to triple the sauce to make enough for the noodles. The flavor of the vinegar was way too overpowering. My kids couldn't stand it - we plugged our noses to get it down just so we didn't waste food. We won't be making this again. - 11/26/10

    will make tonight. have made many peanut sauces and one usually has to thin it out with water. will use rice vinager, fresh ginger and garlic with lots of brocoli, and red peppers. may add few spicy peppers for myself but kids can pick them out. - 5/9/10

    Neither my SO or I are picky eaters, but thought this was terrible. We tried changing up the sauce after it was done and added broccoli, but nothing could help it. I love peanut butter, but it tasted too strongly of it and was too greasy. The broccoli ended up being the best part of the meal. - 5/6/10

    I could not convince ANYONE in my family to eat this! We are newbies at healthful eating, so that may have been the problem, but it did not look appealing.
