i made this from taking ideas from 2 other recipes.
very yummy. i used only 2 chicken breasts when i made it, because i have such a small slow cooker and there was ALOT of sauce, so you can add more chicken with out changing the amount of other ingredients. the nutrient info is for 3 chicken breasts, 5 servings. i served this over whole wheat pasta ( not included in the calculations) there is plenty of this with just 2 chicken breasts. might also go well over rice or egg noodles. you can also use a whole 8 oz of fat free or 1/3 fat cream cheese, i did half and half (as is the nutrition info)

Ingredients

    3 chicken breasts cubed (or whole)
    2 cans stewed tomatoes
    4 oz. 1/3 fat cream cheese cubed
    4 oz. fat free cream cheese cubed
    1 6oz can tomato paste
    1 pkg slow cooker Italian chicken seasoning (found with other gravy and seasoning pkgs in the grocery store)
    1 6 oz bag spinach
    1 pkg mushrooms

Directions

rinse mushrooms and place at the bottom of crockpot, then rinse spinach and place on top of the mushrooms, crock pot will be very full but the spinach and mushrooms shrink considerably. place cubed (or whole) chicken on top of spinach. cut cream cheese into cubes and palce on top of chicken. mix tomatoes, tomato paste and italian seasoning together in a separate bowl, then cover all ingredients with the mixture.
cook for 4 hours on high or 6-8 hours on low after about an hour and a half you can mix the ingredients, veggies should be tender and cream cheese should be melted, this will disperse the cream cheese throughout the dish.

wonderful over pasta!

    There is not way that each serving has 42 g of protein. Chicken has 6.5 g of protein per oz. 5 servings x 42 =210g. Divide that by 6.5 and thats 50oz of chicken. Each breast would have to be over 16oz apeice. Maybe a little less depending on small amount of protein in other ingred. - 1/15/10

    I loved this dish, although between my husband and I we got more than 5 servings out of it. I think the next time I make it, I will probably use only 1 can of tomatoes and will use 4 oz of cream cheese instead of 8. - 11/10/12

    Excellent. My hubby and I love mushrooms, so doubled the amount. Not crazy about cooked spinach (love it raw) but decided to give it a try. Liked it so much didn't even mind the "stringy green stuff" as DH called it...lol A real keeper. Will definitely be making again! Thanks. - 10/21/10

    i really love all the spinach in it! and its very creamy, yet it's tomato-y its very good. my hubby is very picky and still enjoyed it. i am going to try shredding the chicken next time - 9/7/09

    wow my whole family really like it, i think next time i will leave out one can of tomatoes and see if the consistency is thinker, it wasnt too thin but i would like it to be bit thicker, great though! will definately keep this one! - 9/7/09

    I couldnt find Italian chicken slow-cooker seasoning. Used Italian seasoned stewed tomatoes, Italian seasoning, & garlic powder. It was very bland & texture of chicken was not good. Will do it again, but will bake the chicken separately & add something w/more flavor to the sauce. Hot pepper flakes? - 9/22/10

    the cream cheese needs to be softened and mixed with the tomato mixture for non-cream cheese lovers. My husband took one bite and threw it away.
    I liked it enough to eat it. Definitely liked the mushrooms in it. I don't think I'll make it again. But, if you like tomato based stuff-you'll like it

    Made it tonight. I used one can of diced tomatoes, no mushrooms and 2 T Italian Seasonings to tailor the recipe to my family's taste. The cream cheese does not dissolve and I needed to stir it a lot to mix it in (not good for my family to see chunks of cream cheese!) The taste is great. - 11/12/09
