Ingredients
-
1 Maruchan Pork Ramen Package
1 cup chopped broccoli
1 cup sliced bell pepper
1/2 cup sliced Walla Walla Sweet Onion
1 tsp. miced garlic
4 oz. flank steak, cut into thin strips
1 Tbsp. Kikkoman Teriyaki Sauce and Marinade
Directions
Makes 2 (medium) bowls of ramen
Note: For ease of cutting steak into thin strips, place in freezer for about an hour before cutting. This allows you to slice it without having to deal with the smushing-meat factor.
Boil water for the ramen. Add ramen, broccoli, and bell peppers. Cook for three minutes, add the seasoning packet, and cook about two minutes more.
While preparing the ramen, place the garlic and onions in a heating pan. Saute the onions on medium-high until they begin to caramelize, then place the strips of flank steak on top. Cover and let cook for about two minutes, then turn. Add teriyaki sauce. Cover another two minutes, then uncover, reduce heat, and let the liquids simmer down.
Spoon the ramen and veggies into two separate bowls, then add the beef and onions on top.
You can halve the sodium by only using half the packet, or significantly lower it by using the Oriental Ramen Seasoning Copycat Recipe (http://recipes.sparkpeople.com/recipe-detail.asp?recipe=217868), although I haven't tried making that yet. You could also try nixing the seasoning packet altogether and just pouring in all the drippings from the meat... I'll probably try that sometime and update.
