Number of Servings: 8

Ingredients

    2 boxes sugar-free fat-free instant vanilla pudding (1.34 oz)
    3 C. skim milk
    1 can 100% pumpkin (15 oz.)
    Pumpkin pie spice to taste
    Redi Whip

Directions

Mix first 4 ingredients together with a hand mixer until thickened, about 2 minutes. Chill for 5 minutes. Top with Redi Whip and serve. Makes 8 - 1/2 cup servings.

    This was amazing! Tasted like pumpkin pie without the crust. In fact, you could use it as a pie filling and no one would know the difference :). I used 2 cups of almond milk instead of 3 cups of skim (my family doesn't use cow's milk) and I also used ff Cool Whip instead of Redi Whip. - 10/3/10

    I put a tbsp of graham cracker crumbs in the bottom of the dish kind of like a crust and topped it with Cool Whip Free instead of Redi Whip. It was simple to make and guilt free for the holidays! - 11/25/11
