Introduction

Number of Servings: 6

Ingredients

    3 cups egg substitute
    1 large white onion chopped
    5 small potatoes( about 4 cups peeled and chopped)
    salt to taste
    1 Tbls olive oil.

Directions

Cook potato in boiling salted water until tender(about 10 minutes)

preheat oven to 400

meanwhile- in a large non stick pan(I use bottom of a dutch oven) brown onion in oil.(about 5 minutes) When tender-drain potato and pour potato into onion and stir well. Reduce heat to med- pour in egg substutute-DO NOT STIR- cook with out stirring 3 minutes on stovetop covered.

Remove cover and place in oven( cover handles with tinfoil if not oven proof) raise heat to broil an cook uncovered for 3 minutes. Place back on stovetop- covered and cook an additional 3 minutes- then repeat the oven for 3. Your omlette should be firm bu then. Turn over large plate and slice into 6 wedges.
Serve with ketchup if you like!
