Introduction
This is a yummy mexican inspired dish, I love that the salad is served with salsa, sour cream & guacamole instead of boring old salad dressing. Nice & Low Calories for those Calorie Counters out there! Ingredients
-
~ 4 small whole wheat tortilla wraps
~4 tbsp salsa
~4 tbsp low fat sour cream
~2 tbsp guacamole
~2 med-large boneless, skinless chicken breasts
~1 cup shredded romaine lettuce
~1/4 cup diced onions
~1/2 cup shredded cheese
Directions
~cut chicken into cubes and pan fry in a non stick pan with a little water or non fat cooking spray
~once chicken is fully cooked (20 mins) set aside
~I prefer 4 small tortilla wraps, place your 2 small wraps on a baking sheet (do not grease baking pan)
~spread 1 tbsp of salsa on each of the wraps (2 wraps = 2 tbsp of salsa)
~layer diced chicken on salsa be sure to leave about 4 tbsp of diced chicken aside for salad
~divide the onions equally between the two tortillas
~same goes with the cheese, divide between the 2 wraps
~place the remaining tortillas on top to make a sandwhich or quesadilla
~bake in oven at 375 degrees F for 10 minutes or untill top tortilla is golden brown
~for the salad, divide the 1 cup of lettuce equally into 2 portions
~divide the remaining chicken between the 2 salads
~and use remaining salsa, sour cream & guacamole as a salad dressing...I like to place little globs all over the top of the salad that way each bite is different.
