Low cal/low carb alternative to a potato dish

Ingredients

    1 large head cauliflower
    4 oz. low fat cream cheese
    1 T butter
    1/2 cup fat free sour cream
    1/4 cup minced green onions
    1/4 cup freshly grated parmesan cheese
    5 slices bacon, cooked very crisp and crumbled
    1 cup reduced fat sharp cheddar cheese

Directions

Preheat oven to 350 F. Cut out stem and core from cauliflower, and cut into small pieces. Cook in large pot of boiling water until cauliflower is tender, but not overly soft. Drain well and mash with potato masher, leaving some chunks. Mix in cream cheese, butter (if using), sour cream, green onion, Parmesan, and 3/4 of the bacon.

Spread evenly in an 8 X 8 inch glass casserole dish. Sprinkle with cheddar cheese and reserved bacon. Bake 30-35 minutes, or until hot and bubbly.

    My husband is on a very strict heart-healthy diet and this is one of his favorites. Mashed potatoes were something that he loved before and he eats this dish every night now! Thanks so much! - 6/18/11

    The first time I made this, I used the left over al dente "rice" in my fridge. Didn't use low fat ingredients or the bacon. Tasted like a baked potato/tator tot. Very good! Thank you. - 6/5/16

    I used full fat ingredients, and nacho shredded cheese on top instead of cheddar - amazing! Next time I would use a larger cauliflower (if you use a small cauliflower it ends up really, really rich) and would personally add more bacon and some jalapeņos - just my personal twist. Highly recommended - 2/28/16

    I have made this several times and we love it! It is my new go-to for "bring a dish" functions and the reviews are always great. We follow a low-carb diet, but not low-fat, so I usually use the "regular" ingredients, not low fat. - 11/20/14

    I used 3oz of fat-free cream cheese, then 1oz of Philly onion-chive cream cheese bc the family doesnt like green onions. Didnt use butter either but did add a pinch of parsley for color. I cant get enough of this dish! It is SOOO good! - 5/7/12
