Ingredients

    2 racks baby back ribs
    1 two litre bottle of Dr. Pepper
    Salt and pepper to taste
    1 tbsp chili powder
    1 cup water
    1/2 tbsp canola oil
    1/2 onion minced
    1 garlic clove minced
    1/2 cup ketchup
    1 tbsp Worchestershire sauce
    1 tbsp apple cider vinegar
    1/8 tsp cayenne pepper

Tips

Note: The nutrition facts include calories for the entire marinade even though a lot of it ends up discarded. The most accurate way to determine the nutritional impact of a marinade is to measure the volume you started with and the amount is leftover after the marinating process to see how much was absorbed into the meat. That amount will vary for every cut of meat and the amount of time you marinate it.


Directions

Place ribs in a dish large enough to hold them comfortably. Pour in enough soda to cover, saving 1/2 cup for the barbecue sauce. Add 1/4 cup salt and soak for at least 2 hours or overnight in the fridge.

Prepare grill. Remove the ribs from the liquid and pat dry; discard liquid. Sprinkle ribs with the chili powder and place on the grill. Periodically spritz the ribs with apple juice to keep them moist. Cook until the meat is tender and nearly falling off the bone.

BBQ sauce
While ribs are cooking, heat oil in a medium saucepan over medium heat. Saute the oinion and garlic until soft, then add the ketchup, Worcestershire, vinegar, cayenne, and reserved 1/2 cup soda. Simmer for 15 to 20 minutes, until thickened.

Brush the ribs with the barbecue sauce and grill for 10 to 15 minutes, rib side down on a cooler part of the grates. Flip and cook the other side until lightly charred. Remove from the grill and brush with more sauce and serve.

Makes 4 servings and happy children.
