Found this one years ago in a healthy magazine. 10 years later it is still one of our favorites and my college son now cooks it for him and his buddies. We take the leftovers and use it in a tortilla the next day for lunch with sour cream and cheese. Ingredients

    1 lb chicken, boneless and skinless
    1 cup frozen corn kernels
    1 can of black beans, rinsed
    2 cloves garlic
    1 small onion chopped
    1 can of diced tomatoes
    1 Tbls Chili powder
    1 teaspoon paprika
    1 teaspoon cumin
    salt and pepper to taste
    1/2 cup chopped cilantro

Directions

salt and pepper the chicken and saute in skillet on medium heat that has been prepared with cooking spray. When the chicken is almost cooked through on both sides, add the onion and saute for a few minutes more. Then add the frozen corn, can of black beans that have been rinsed, garlic, can of tomatoes and spices. Cover and simmer on low for 10 minutes. Can be served over rice.

    This recipe is really good. Used white rice and chicken thighs and half the spices except for the garlic and daughter even raved. Daughters been begging me for healthier meals. This is the first time she actually liked what she was eating! - 4/22/10

    I served this over brown rice and topped it with just a bit of grated cheddar cheese and fresh avocado. The spice blend was great even though I did not have cilantro it was very good without it. I will add this one to my list of favorites. Very quick to cook with flash frozen chicken breast! - 3/9/11

    This recipe was simple and great! I used low sodium black beans, and low sodium diced tomatoes with green chilies. So we were able to cut the sodium down a little bit more. We also served it over yellow rice. I just finished eating some leftovers for lunch!!! - 2/21/09

    This was a great dish I wanted t so bad I could taste is before it was done! I did have to do some substitues only because some of the ingredients I did not have on hand I used a black bean salsa and tabasco sauce in place of black beans and chili powder reminds me of chicken chili it was delicious - 2/20/09
