Ingredients

2 tbs olive oil
1 tsp paprika
3/4 tsp chili powder
2 tsp salt
1/4 tsp ground red pepper
1/8 tsp garlic powder
1/8 tsp onion powder
6 1/2 c diced potatoes
Cooking spray
Directions
Preheat the oven to 400 degrees. Peel the potatoes, if you prefer them with skin you can leave it on, and dice into 3/4" to 1" cubes. Place potatoes in a mixing bowl. In a small bowl, combine the olive oil with the spices. Pour the olive oil and spice mixture over the potatoes and toss to coat. Spray a 13x9x2 pan with cooking spray. Arrange the potatoes on the cookie sheet in a single layer and bake at 400 degrees for 30 minutes or until browned to your liking. Serve immediately. Makes about 8 1/2 c servings
For even more flavor I use smoked paprika and smoked sea salt in place of the regular version of these spices. I also substitute red potatoes if I have them on hand.

These are remarkably good. I put them in the toaster oven and cooked them that way. Not only is it better for you but it didn't have a big clean up. After I fry home fries with oil it gets messy but not with olive oil in the oven. Yayyy!! and just tasty. to season I used a ziploc bag to coat them - 2/29/16

I'm glad you guys like this recipe so much! I found it in a magazine when I was visiting the doctor as a kid and I copied it. My mom couldn't believe that they could be so good with so little oil, but it's been a family favorite ever since.

Amazing! I added Tonys Creole Seasoning instead of the chili powder and put a tiny bit of lemon juice. It was funny when my boyfriend saw fried in the title he got excited but then I told him it would really be baked. But I think this blew his mind!! - 10/21/12
