Ingredients

1/2 cup chopped red pepper
1 Large carrot, grated
1 Cup diced celery
1 Medium Yellow Onion, chopped
3 large cloves garlic, minced
1 lb lean ground turkey
1 6oz can tomato paste
1 can Huntz sloppy joe sauce
1 tbspn garlic powder
1 tsp celery salt
1 tsp ground black pepper
2 tbspn olive oil
8 Whole Wheat hamburger buns (I used Weight Watchers for the calorie calculation)
Directions
Chop the red pepper, onion, carrot, and celery. Set aside. Mince the garlic and add to the vegetables.
In a large non-stick pot, drizzle 2 tbspn olive oil and set heat to medium. Add the vegetables and allow to slowly cook down for approximately 5-10 minutes. Once the onions have a slightly translucent look, add the ground lean turkey, crumbling and breaking it up as it is added to the pot. Cook completely thru.
Once the turkey is cooked, drain any fat that is at the bottom of pot. Return to pot on stove over a medium heat, and add on can tomato paste, stirring constantly until completely incorporated. Add garlic powder, celery salt, and pepper.
Transfer the mixture to a large slow cooker. Cover with one can of Huntz sloppy joe sauce. Mix thoroughly, cover, and set on low for 4-6 hours, or high 2-3 hours.
Serving is 3/4 cup to one wheat hamburger roll.

I used oil spray and 1 T oil, so cut half the fat. I also used 2 stalks celery, which ended up being more than 1 cup - so more vegetables, hurray!
One of the first ingredients on the Hunt's Sloppy Joe sauce can was high fructuse corn syrup, so I just used a can of regular tomato puree + spices. - 1/30/11
