Ingredients

    Cabbage - 1/2 Medium head
    Beef Stew Meat - 12 OZ
    Celery - 4 Med Stalks
    Baby Carrots - 1 Med Bag
    V8 Juice - Big Bottle
    Hunts Canned Tomatos - 2
    Onion - 2 Medium
    Water (tap or bottled) - 5 cups

Directions

It is a very simple recipe once you get everything out and going. Brown the meat in the Pot that you are going to be cooking the soup in. Cut up all the vegetables and add the V8 and the water (less water if you want it thicker) to the pot, add salt and pepper to taste. Just like any good soup that has vegetables in it, it needs to cook for a couple hours to pull all the flavors together into the broth. Probably 3 to 4 according to taste. 3 if you want crunchy veggies or 4 if you like them softer. Dish up and serve.

    This was great! My kids and husband really liked it. Instead of canned whole tomatoes, I used a can of Rotel,(it's diced tomatoes with chilli peppers. I also added a can of low sodium beef broth. This will be great to have on hand for a snack or lunch. Thanks for sharing! - 1/26/09

    I made this with a couple alternates i did not have cabbage so i added, 6 small potatoes and lima beans. I usually dont eat the potatoes but hubby likes them. It was great. Also instead of stew meat I used left over roast.. yummy!!! I will try it next time with the cabbage. - 1/20/09
