Introduction

My very favorite way to serve Brussels sprouts! My very favorite way to serve Brussels sprouts!
Number of Servings: 6

Ingredients

1 pound Brussels sprouts, washed and quartered
3 slices center cut bacon, fat trimmed
1 tart, crisp apple, cored and cut into chunks
    1/4 cup unsweetened apple juice
    2 tablespoons diced red onion
    Salt and pepper to taste

Directions

Heat a large skillet over medium heat and add bacon strips. Cook, turning once, until browned. Remove the bacon to a cutting board and slice into 1″ pieces. Reserve 1tablespoon of the bacon drippings and discard the rest. Add brussels sprouts and apples. Pour in the apple juice. Cook over medium heat, stirring occasionally, about 10 minutes or until sprouts turn bright green and tender. Add bacon back to the skillet, and cook for 2 more minutes. Season to taste with salt and pepper. Serve immediately.

Makes about 6 servings.

I have used this for years now EXCEPT for the apple. My original recipe was called "Brussels Sprouts for people who Hate Brussels Sprouts" and so far I have a number of converts to love them. Great job posting this and I will use a sweet apple instead of the Granny. THANKS ! - 11/20/13

We used pancetta instead of bacon and was yummy. Suggest searing/grilling brussel sprouts for more crunch. - 11/23/13

Great recipe, Did minus the bacon, did some al fresco chicken bacon alone and crumbled on top. Used broth and the juice or cider to cook veggies, (some vegetarians eating so that is why the bacon alone) variation is some balsamic and mustard instead of juice or cider. Braggs brambleberry good too. - 11/21/18

Don't trim the bacon fat, just make sure you measure the rendered fat. Fat plus acid = dressing. - 11/20/17

This was yummy. The kids & hubby ate it and they're picky w/veggies. I don't usually keep apple juice in the house so I added a tbsp of applesauce to water and used that instead. But it was great. - 5/10/16

I really like it. I love apples and onions. My boyfriend he liked them until I told him there were apples in it. But he did still like it and even ate seconds. He is not a fan of sweet and savory mix. - 2/29/16

Best Brussel Sprouts I have ever eaten! I will be making them over and over again. I used a Granny Smith apple and left maybe 3 tablespoons of bacon fat in the pan. The only problem with the recipe is that it does not say when to add the onion. YUM! - 11/25/15

I have been on a brussels sprouts kick lately, and this is a fun way to incorporate some different flavors. I didn't have apple juice but substituted apple cider vinegar with some water and made it a meal by adding some chopped pecans and topped it with parmesan cheese. - 3/16/15

I never cooked Brussels sprouts before but this recipe made it very easy and it was delicious. The recipe did not indicate when to add the onion so I added it to the pan when instructed to add the sprouts and apple. I will make again. - 11/2/14

I've made this with turkey bacon to reduce the fat and with vegetable stock instead of water to enhance the flavor. It's a favorite around our dinner table. - 1/4/14

My husband was fed bitter brussel sprouts as a kid so we've never made any, until this. And he loved them! We used turkey bacon, sweet apple, and apple cider and it was still wonderful (although I'm sure regular bacon is better.) Also used thawed frozen sprouts. - 1/2/14
