Ingredients

    1/2 cup quinoa
    2 tsp olive oil
    6 cloves garlic, minced
    1/2 tsp chicken or vegetable oxo or 1/2 cup broth

Directions

Fry minced garlic in 2 teaspoons of olive oil in bottom of saucepan. Add 1/2 cup quinoa and lightly toast. Add 1/2 cup broth. Bring to boil then simmer, covered for 15 minutes. Cool 5 minutes then fluff with fork.
Makes 2 half cup servings (it expands as it cooks)

    This was great. I added a small diced onion before the garlic because I couldn't help myself. And about 3 tbsp diced fresh chives after the 15 minutes because they were there. Will totally make again. Served with shrimp scampi. - 2/16/18

    This was my first time trying quinoa, I didn't enjoy it. My package says 2 parts water, 1 part quinoa, so I wonder if I had used 1 cup of broth and 1/2 cup of quinoa it would have been fluffier. - 1/18/12

    I am afraid my boyfriend and I both agreed that the roasted garlic made it rather bitter. I wouldn't recommend this for first time Quinoa makers/eaters. - 9/19/11

    Very Good
    I had never tried Quinoa before. Decided to try this recipe as it looked simple and love garlic. I used 1 cup broth instead of 1/2 cup and thought it was really good. I would definitely make it again. - 9/14/13

    The garlic made the quinoa a little bitter and it did not come out fluffy. In fact, I had to add water to get all the quinoa cooked. I think the measurements are off. - 6/21/13
