Ingredients

    8-6 inch tortillas
    1/2 tsp pepper
    1 tsp. ground corriander
    2 tbsp butter
    3 tbsp all purpose flour
    1-8 oz carton dairy sour cream
    2 cups chicken broth
    1 cup shredded monterey jack cheese
    2 cups chopped cooked chicken

Directions

Makes 8 tortilla servings
Wrap tortillas in foil. Heat in 350 degree oven for 10 to 15 mins.
For sauce, in saucepan cook corriander and pepper in butter.
Stir flour into sour cream; add to butter mixture. Stir in broth. Cook and stir until thickened and bubbly. Remove from hear. Stir in 1/2 cup of the Monterey Cheese.
For filling, stir 1/2 cup of the sauce into the chopped cooked chicken.
Place 1/4 cup filling atop each tortilla, roll-up. Arrange rolls, seam side down in a lightly greased 12X7X2 in. baking dish. Top w/ remaining sauce. Cover w/ foil and bake at 350 degrees for 35 minutes.
Remove, uncover and sprinkle remaining cheese on top. Bake uncovered for another 5 minutes.
Remove from oven and let stand for 10 minutes. Top w/ tomatoes, olives, and green onions (or just leave plain).

    The sauce on this recipe is to die for! I did add 1 tsp of chili powder and 1/2 tsp of cumin to give it a little more Mexican flavor but other than that I made it as is. One of my sons who normally hates Mexican really loved this one. - 8/2/11

    This is the first time I've made enchiladas, but they were fanstastic! I will definatley be making these again. The only thing I changed was I substituted low fat/fat free/ low sodium versions of the ingredients just to make them a bit healthier. Absolutley Awesome!!!! :D - 9/17/09

    WOW! My kids 5 and 7 devoured these. I used leftover chicken and pork loin with mexican shredded cheese. They were fantastic. Definitely be on our menu from now on. - 2/21/08
