Introduction

Ingredients

    6 oz. cooked chicken breast, cut into chunks
    1/4 c. Hellman's canola mayo
    1 large celery stalk, chopped
    1/2 tsp. dried basil
    1/4 tsp. minced garlic
    dash onion powder
    fresh ground pepper
    3 Whole wheat pita halves
    1 1/2 Romaine lettuce leaves

Directions

In a medium sized bowl, mix all the ingredients except the chicken, pita and lettuce. Once this is mixed into a nice dressing, add the chicken, combining well. Take pita half and stuff each one with 1/4 cup of the chicken mixture. Place half a romaine lettuce leaf in each pita.

You can add several different items of choice like pepper, cucumber, hummus, onion etc. This sandwhich is very tasty and delicious on its own but is easily adaptable to various tastes.

Makes 3 servings.

    Delicious! I loved it! My mom and boyfriend loved it as well, I even doubled the recipe! After they ate it all, they asked me to make some more for the week so I quadrupled the recipe to make enough for everyone. It's amazing! Thank you for sharing! - 3/28/10

    Loved this! What a quick chicken salad recipe for lunch. I didn't have celery so I just left it out and it was still good. I'll definitely use celery next time for the added crunch. Thanks! - 3/22/10

    Very Good
    This recipe was quick and easy and absolutely delicious! I topped it with onions, bell peppers and swiss cheese and served it with a side of green seedless grapes which complimented the flavors in the chix salad. Simply marvelous! Thank you for sharing! - 4/9/10
