Introduction

a low carb/high fiber snack...I was looking for a way to increase my fiber yet stay low carb...this is it! a low carb/high fiber snack...I was looking for a way to increase my fiber yet stay low carb...this is it!
Number of Servings: 1

Ingredients

    4 tbsp flax meal
    0.5 cup boiling water
    2 tbsp peanut butter(I use Naturally More-it has more fiber and added flax)
    0.25 tsp cinnamon

Directions

Pour the boiling water over the flax meal and stir thoroughly.

Add the peanut butter and cinnamon. Let the mixture thicken for 1-2 minutes.

Enjoy!

(You can make a half-portion of this for when you want just a taste!)

    I liked this a lot. added some heavy cream and a packet of Stevia to mine. very good. I still miss the taste of brown sugar but I'm not going to worry about it til I get my weight down. This is very good accompaniment to eggs to fill you up. - 4/25/10

    I substituted PB2, splenda and an extra TBSP of water for the PB and half the recipe was only 85 cals and super tasty. The texture seems a little strange, but this was the first time I've had hot flaxmeal this way. - 8/2/12

    I made this for breakfast today as it's cold and snowing so I was missing my oatmeal. Let me tell you, I won't be missing my hot cereal anymore! This was delicious. I also added the Stevia and 1 tbsp heavy cream and SF Syrup. - 12/8/10

    Incredible!
    I' have been eating this for breakfast for years. I add 1 tbspn chia seeds, use 1 tbspn peanut butter and quarter tspn cinammon. Add boiling water - the chia seeds will thicken on standing - then either a cut up Kiwifruit or half cup thawed frozen mixed berries. Delicious! - 1/22/15

    I must have made this wrong. The taste was good. The consistency was disgusting. Peanut flavored snot. Any suggestions for fixing that? - 6/18/13

    I made half this recipe as a serving = 4 Weight watchers points plus for half of it...the whole thing would have been 9 points plus.
    Added a bit of cocoa powder and some splenda to it... very tasty.

    Super tasty, and such an awesome way to increase fiber intake! I added a little Splenda and about 3 T. sugarfree syrup. Reminded me of ooey gooey cinnamon roll oatmeal. Will definitely be making this on a regular basis, because you can only eat so many eggs for breakfast! Thanks! - 7/8/09

    YUMMMM!! This is the best low carb oatmeal-ish recipe I've tried...and I've tried a lot. I added a packet of splenda for sweetness....next time I think I'll add a tablespoon of SF maple syrup. This recipe ROCKS! - 2/24/08
