Introduction

I loved this recipe. You can eat these like traditional pancakes or roll them up with blueberries inside like a canoli. My mom, Darlene, found this recipe at the gym and adapted it as you see here. Ingredients

    1 C Whole Wheat Flour
    1 large Egg
    1 large egg white
    1/2 tsp Baking Powder
    1/2 tsp Baking Soda
    1/4 tsp Sea Salt
    1/2 tsp Cinnamon, ground
    2 TBSP Applesauce, unsweetened
    1 tsp Whole Ground Flaxseed Meal
    1 tsp Vanilla Extract
    2 tsp Honey
    Topping can be these things or others, but this is how I calculated the nutritional info
    1 1/2 TBSP Honey
    1/2 C Blueberries
    2 TBSP Walnuts
    3 TBSP Applesauce Unsweetened

Directions

Mix all ingredients together until moistened (except for the listed toppings). Spoon 1/4 cupfuls of batter onto a sprayed skillet or griddle on medium-high heat.
Top pancakes with warmed applesauce, blueberries walnuts and a little honey, or yogurt, other fruit or spread. (strawberries, bananas, pumpkin puree, dark chocolate, chopped nuts, etc...)
