Ingredients

    extra virgin olive oil
    Basmati Brown Rice (1/4 cup dry), 1 cup
    French lentils, 1 cup
    Leek (1 cup = 1 leek= 89g), 1 cup
    Carrots, raw, 1 cup, chopped
    Bella Sun Luci Sun Dried Tomatoes, 0.25 oz
    Garlic, 2 cloves
    Parsley, 2 tbsp
    Broth - Chicken (Pacific), 4 cup

Directions

saute carrots and leek in olive oil until soft.

Add lentils, brown rice, water and stock and bring to boil. Cover and reduce to simmer until water is absorbed and lentils and brown rice are cooked through.

    Very Good
    Will try this this weekend.Sounds good. However it sounds like too much garlic for me. A cup goes a long way. - 3/22/10

    Oops! That was a mistake and I have now corrected it. I only used two cloves not a cup.
