Introduction
Really yummy and fun!! Really yummy and fun!!Number of Servings: 30
Ingredients
-
Quaker Oats, 4 cup, dry, yields
Skippy Creamy Peanut Butter, 1/2 cup
Smart Balance Buttery Spread, 1/2 cup
Milk (1%), 1/2 cup
Cocoa, dry powder, unsweetened, 4 tbsp
Granulated Sugar, 1/2 cup
Directions
Microwave Smart Balance, milk, cocoa powder and sugar in large bowl on high for 3 minutes.
Stir, microwave for 2 more minutes. Remove from heat.
Add peanut butter, stir until melted.
Add oats and stir. Then microwave again for 1 minute and stir until coated well.
Drop by spoonfulls (I use a small ice cream scooper - like the size of a melon baller approximately the size of a walnut) onto cookie sheet covered with waxed paper. Then mash them down with clean fingers and shape them into little cookie patties. :-)
Refrigerate until cool. Makes approximately 30 large cookies.
My kiddos LOVE these cookies!!
Try using honey instead of sugar and natural peanut butter instead of Skippy... this will further lower the calories.
Omit the cocoa and add nuts, mini dark chocolate chips, coconut flakes, flax seeds and/or dried fruit for a different spin on these fun and easy cookies!
