Ingredients

2 1/4 c. cake flour
3/4 tsp. baking soda
1/2 tsp baking powder
1/2 tsp. salt, plus a pinch
3 med. bananas, mashed
1/4 c. buttermilk
2 tsp. vanilla extract
1/2 c. butter, room temp.
1 1/3 c. sugar
2 large eggs
Directions
One serving is a regular adult sized cup-cake (1.5 oz.) A mini cup-cake is .5 oz.
Preheat oven to 350 degrees F. Combine dry ingredients in a medium bow. Combine bananas, buttermilk, and vanilla in another medium bowl. Combine butter and sugar in a large bowl. Cream butter and sugar with mixer, then add eggs one at a time, beating after each. Add dry ingredients alternately with banana mixture in 3 additions, beginning and ending with dry ingredients and beating until just blended after each. Could use cake pans, but I do cupcakes. Cook 10-20 minutes depending on size of cake and check with toothpick (comes out clean-ish) to decide when done. Great with cream cheese frosting.
