Introduction

If you like spicy and you like fajitas, you will LOVE this easy stew! I seem to be really good at creating spicy, mexican inspired "slop"...LOL...this one was particularly yummy! I have never done this before and I guessed on some of the ingredient amounts for the nutritional info...sorry...Im a newbie!...LOL If you like spicy and you like fajitas, you will LOVE this easy stew! Ingredients

    3 boneless skinless chicken breasts, sliced or chunked
    1 can red enchilada sauce
    1 can ro-tel
    1 can black beans (rinsed, the black juice totally grosses me out)
    1/2 yellow pepper, 1/2 red pepper, 1/2 orange pepper, 1/2 sweet onion, chopped
    1 packet of fajita seasoning
    1 pack of uncle bens microwavable brown rice
    fat free cheddar cheese
    light or fat free sour cream (optional)

Directions

~Turn on Crock pot.
~Add 1 can ro-tel, 1 can enchilada sauce, 1 can black beans to crock pot.
~Chop peppers and onions. add to crock pot
~spray frying pan with PAM and fry chunked chicken. Add fajita seasoning and a bit of water. add to crock pot
~ microwave uncle bens brown rice (90 seconds) then add to crock pot
~ stir all ingredients
~ leave ingredients in crock pot, until ready to serve, stirring occasionally
~ top with cheddar cheese and/or sour cream when you serve it!
~ ENJOY! yummy!!!

*When I made this, I ate a bowl for dinner, sent about 2 servings home with a friend and still had enough to split the remainder into 3 Tupperware dishes for lunches...I would say that this makes about 6 reasonably sized servings!
