Ingredients

Water, 2 cups
Onion, 1 medium
Bacon, 8 oz
Beans, black, 15.25 oz (1 can)
Chickpeas (garbanzo beans), 15 oz (1 can)
White Rice, short grain, 2 cup
Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 14 oz (1 can)
Rotelle diced tomatoes with habanero, 10 oz (1 can)
Oregano, 1 tbsp
Paprika, ground, 2 tsp
Garlic powder, 1 tsp
Salt, 1 tsp
Directions
PREPARATION - - - - - - - -
Slice the bacon cross-wise into match-sticks (about 1/4 inch width).
Peel and chop onion into medium mince.
COOKING - - - - - - - -
Over medium-high heat, saute bacon and onion until bacon is brown and onions are translucent.
Add all other ingredients to pan (include liquids from beans and tomatoes).
Add rice and stir thoroughly.
Once ingredients return to boil, reduce heat to low, stir and cover.
Stir about every five minutes for a total, additional cooking time of 20 minutes.
