Ingredients

Ingredients:
* Onions, raw, 1 medium (2-1/2" dia) (remove)
* Celery, raw, 4 stalk, medium (7-1/2" - 8" long) (remove)
* Canned Tomatoes, 1 can
* Tomato Sauce, .5 cup
* Water, tap, 4 cup (8 fl oz)
* Salt, 1 tsp
* *Tilapia, 24 oz
* Carrots, raw, 4 medium
* *Potato, raw, 3 large (3" to 4-1/4" dia.)
* Thyme leaves, 2 tsp
Directions
PREPARATION - - - - - - -
Peel and chop onion, carrots, and celery to medium dice.
Thoroughly scrub potatoes and dice (about 1/2 inch cubes).
Cut tilapia fillets into pieces (I split each lengthwise and then cut the thin half into quarters - thick half into sixths).
COOKING - - - - - -
Place all ingredients except tilapia into soup pot over medium-high heat. Brings to boil and reduce heat to medium-low (maintain low simmer). Cook for 30 minutes.
Turn off heat and add tilapia, turning ingredients to submerge fish. Allow to stand for about 5 minutes.
Makes 6 servings - about 1.5-2 cups each.
