Ingredients

    1 pound ground beef (96% lean)
    1 - 15 oz. can black beans
    1 - 8 oz. can tomato sauce
    1 package reduced sodium taco seasoning mix (1.25 oz.)
    1/2 cup water
    1 package Chi-Chi's Sweet Corn Cake Mix
    1 - 14.75 oz. can sweet cream style corn
    2 Tbls. Earth Balance Buttery Spread (melted)
    1/8 cup water
    .5 cup shredded low fat cheddar cheese

Directions

Brown ground beef.
Stir in beans, tomato sauce, taco seasoning mix and water.
Spoon into casserole.
Prepare sweet corn cake mix using 1 can of cream style corn, 2 tbls of buttery spread and 1/8 cup water.
Spread corn cake mix over top of beef mixture.
Bake at 400 degrees for 20 minutes.
Sprinkle with shredded cheese and bake an additional 5 to 10 minutes.

    Very Good
    I really liked the recipe. It was spicy, sweet and very hearty.I really enjoyed the mix of all of the flavors blended together. Great recipe! I would definately make it again. - 2/13/11
