Introduction
I got this recipe from the Hungry Girl web-site but swapped the wheat pasta with Quinoa pasta. Great low cal way to enjoy macaroni and cheese for those of you who don't want to give it up! Ingredients

1 box Quinoa Elbow Pasta
3 wedges laughing cow light cheese
3 10 oz boxes of Green Giant Cauliflower and 3 cheese sauce, or 1 family size box
salt and pepper, to taste
Directions
Cook pasta according to instructions on the box, then drain and set aside. While pasta is cooking transfer cauliflower to a microwave safe dish and cook for 12-16 minutes to heat. In a large bowl mix cauliflower/cheese mix to cooked pasta. Add 3 wedges of laughing cow light cheese and stir well to be sure laughing cow wedges are melted evenly into the mix. Season with salt and pepper and enjoy your dish!
