Introduction

This can be made with or without the turkey sausage. I think the combination of the turkey sausage and the squash is amazing! The original recipe I got the inspiration from this did not have sausage, but had mushrooms instead. Just another idea! This can be made with or without the turkey sausage. Ingredients

    1 Package Butterball Turkey Sausage, cut into circles
    1 Box Whole Wheat Penne Pasta, boiled and drained
    1 Whole Butternut Squash
    1 Bunch Fresh Sage (can use dry)
    1 Small Onion, Sliced
    Fresh Parmesan Cheese, garnish
    Salt and Pepper, as desired
    **pan spray or extra virgin olive oil if preffered**

Directions

Preheat oven to 375 degrees. Cut the squash in half lengthwise and place on a baking sheet flesh side down, skin up. Let bake until you can pierce easily with a fork. Dont overcook or it with get mushy when you add it to the pasta. When finished, peel the skin off and cut squash into bite sized cubes.

Meanwhile, boil pasta according to directions.

In large skillet, add uncooked turkey sausage cut into circles using pan spray or olive oil. Add onion strips halfway through cooking the turkey sausage. When fully cooked, add squash and toss around to incorporate. Sprinkle mixture with salt, pepper, and sage. Serve over pasta and sprinkle with Parmesan cheese.
