Introduction

My husband (John) and I invented this on the fly. We ate it with lettuce as wraps, but you could serve it with rice or however you would like. My husband (John) and I invented this on the fly. We ate it with lettuce as wraps, but you could serve it with rice or however you would like.

Ingredients

    1 lb ground meat (we use turkey)
    1 cup black-eyed peas, cooked & drained
    1 cup chopped green pepper
    1 tbsp cajun seasoning (or to taste)
    1/2 cup BBQ sauce
    salt to taste

Directions

Brown meat. Drain fat, add green peppers and peas, seasoning and salt to taste. Cook until peppers are just tender and add BBQ sauce. Makes 10 one-third cup servings.
