Ingredients

Dry Ingredients:
1 c. white flour
0.75 c. white whole wheat flour
0.5 oat bran
0.5 c. wheat bran
0.3 c. light brown sugar, packed
1 tsp baking powder
2.5 tsp baking soda
1 tsp cinnamon, ground
1 tsp cloves, ground
1 tsp nutmeg, ground
0.5 tsp salt
Wet Ingredients:
2 tbsp vanilla extract
2 eggs
1 c. 1% milk
0.75 c. apple butter
2 tbsp molasses
Add-Ins:
2.5 medium Granny Smith apples, chopped
1 c. Walnuts, chopped and toasted
Directions
Preheat oven to 375 degrees.
Combine all dry ingredients.
In a separate bowl, whisk eggs until combined, then add remaining wet ingredients and thoroughly combine.
Stir wet ingredients into dry ingredients until combined.
Add add-ins (apples and walnuts) until combined.
Pour mixture into greased muffin tins and bake until skewer inserted in center of muffin comes out clean, 17 - 20 minutes. Makes 24 standard-sized or 12 "jumbo" (one-cup tin) muffins.
