Number of Servings: 12

Ingredients

    1 12-oz package of tri-color rotini Barilla pasta
    1 15-oz can of cut green beans
    1 15-oz can of chick peas
    1 15-oz can of dark red kidney beans
    1 10-oz package of frozen spinach
    1/3 of a 32 oz jar of Sweet red peppers with liquid

Directions

Cook the pasta.
Drain and rinse the 3 cans of beans.
Cut sweet peppers in strips and reserve liquid.
Drain pasta and mix in frozen spinach while pasta is still hot. Pasta will defrost spinach and spinach will cool pasta.
Mix in 3 cans of beans as well as liquid from the pepper.
Liquid serves as dressing on the salad.

Makes 12 1-cup of servings. Serve it right away or keep it in the fridge for a week. It gets better by time.
