This is a quick chicken salad great for sandwiches or on top of lettuce. This is a quick chicken salad great for sandwiches or on top of lettuce.
Number of Servings: 8


    8 oz. rotisserie chicken meat (preferably breast)
    1/2 c. chopped celery
    2 green onions
    3 T light mayonnaise
    a bit of pepper to taste


1. chop chicken into smallish chunks
2. Add all ingredients to a bowl and mix.

Makes 8 servings of 1/4 C.
