These are light and fluffy and full of delicious flavor! If you love banana bread then these pancakes will be the ultimate treat! Add a tsp of cocoa for a light chocolate flavor if you're looking for some variety. My family loves these and they are a breakfast/brunch favorite! Check out how healthy they are too!! Ingredients

3/4 c. whole wheat flour
1/4 c. white flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
2 ripe bananas
2 egg whites
1 1/2 tsp. vanilla extract
3/4 c. lowfat buttermilk
Directions
In a medium sized bowl, combine with a wisk the flours, baking powder, baking soda and cinnamon.
In a separate bowl, mash the bananas well. Add the egg whites and vanilla and mix thoroughly. Mix in the buttermilk.
Add the dry ingredients to the wet and combine well.
Spray with non stick spray a griddle or large fry pan and heat on medium heat. Using a 1/4 cup measuring cup, measure out batter and spread on the griddle - using the back of the cup to help spread it out. You could add more buttermilk if it is too thick but I love them thick and fluffy so I just spread them out and let them cook. It works great.
After it is golden brown on the one side, flip to finish cooking.
Serve with your favorite healthy topping!
Makes 11-12 depending how heaping the measuring cup is.
