Introduction

I modified this recipe to increase veggies and fruit and decrease cholesterol. My husband loved it and was looking for more to take to work for his lunch the next day. Ingredients

    3 cups cooked Uncle Ben's wholegrain brown rice
    8 oz pkg frozen shrimp, tails removed
    1 cup frozen peas
    1 cup chopped red peppers
    1/2 cup chopped onion (didn't have green)
    1 cup chopped frozen peaches
    1/4 cup Egg Creations
    2 tbsp olive oil
    2 tbsp soy sauce
    pepper to taste

Directions

Heat olive oil in skillet. Add onion and cook til opaque. Add red pepper, peaches and peas, heat until peas and peaches are almost thawed and peppers are softened, then add rice. Cook 2-3 minutes more until heated through then make a well in center of pan and add egg creations. Scramble egg until almost cooked, then mix all together and add soy sauce and pepper to taste.
